This year, a dream was fulfilled: I started making my own chocolate fright from the roasted nibs. Fun right? I know!
To be honest, I haven't been satisfied with the sugar-free chocolate that's available on the market, and so much like my personality, I decided to make my own. And you know what? It's delicious and you would never know it has no sugar in it, so you pretty much can have your bar & eat it too -- hahahha!
This Dark Chocolate Bar is a lovely size to snack on or share, averaging around 43 grams per bar. People ask me is this 70% Dark Chocolate? The short answer is yes, and no. Let me explain: allulose is 70% as sweet as table sugar, so if I make my Dark Chocolate with 30% allulose and 70% Cocoa solids, the chocolate wouldn't taste as sweet as the traditional 70% dark chocolate bar. So, to mitigate this, I add more allulose than you would if you used regular sugar. That means, my dark chocolate tastes that 70% Dark Chocolate but isn't -- so I can't say that it is. Make sense? I hope so :)
Bottom line is that it's super delicious, contains only natural ingredients, made from scratch & you get all the chocolate goodness without the sugar -- so seriously -- Hooray!
Now I try to make everything I do farm to table but I don't grow my own chocolate (wouldn't that be awesome!), since the Canadian climate is not compatible with growing cocoa beans. I do however only purchase from suppliers that can assure that they are sourcing ethically, for fair wages, with no child labour, and from small-scale farmers just like me.
